In 2006 in an endeavor to take control of the quality of the food my family consumes, I decided to get into beef production.  Since then, I have attended many seminars, visited numerous ranches and met many intelligent people in both the cattle business and human health.  Perhaps the most intelligent person was Jerry Brunetti, an animal nutritionist and soil scientist. 

In 1999, Jerry was diagnosed with terminal cancer and given six to twelve months to live.  Jerry used his very bright intellect to research and understand not only cancer but subsequently many of the ailments of modern society.   Implementing this research knowledge and changing his diet allowed him to live until December of 2015, when he died, not from cancer, but from complications of Lyme disease.  Through audio tapes of his seminars on human health and  personal meetings with him, I learned of others promoting better human health through diet:  the books of Dr. William Davis (Wheat Belly and Wheat Belly Total Health); the research and books of Dr. David Perlmutter (Grain Brain and Brain Maker); Dr. Joseph Mercola and The Weston A. Price Foundation.

In 2013, based on my research,  I made a major lifestyle and diet change.  As a matter of reference, I was 69 years old when I took control of my diet and my health.  All my research led me to the importance of healthy saturated fats, which do not exist at the meat counters of today’s grocery stores.   My weight dropped from 200 pounds to 165 pounds; my HDL cholesterol, the good cholesterol (a blood constituent involved in the transport of cholesterol and associated with a decreased risk of atherosclerosis and heart attack) went from 40 to 89 (higher is better).  My triglycerides (an important energy source forming much of the fat stored by the body) went from 216 to 62 (lower is better) and my CRP (C reactive protein) between .2-.3.  (CRP is the measure of inflammation, a precursor of all chronic illnesses.  Below 1.0 is considered excellent).
